A Slow Cooker Beef Joint is one of my favourite ways to do a 'roast' dinner. All the yumminess of a roast dinner but with next to no effort! What's not to love about a lazy Sunday?

While this is not your traditional roasted in the oven joint of beef, it is unbelievably simple.

And is perfect for busy people who need to spend their Sunday doing other things but still want to sit down with the family and enjoy a big roast dinner with all the trimmings.

Our Slow Cooker Beef Joint is perfect every time and cooks in the most wonderfully flavoursome, meaty gravy , I'll bet you already can't wait to pour rivers of it over your dinner!

What Is The Best Beef Joint For Cooking In the Slow Cooker

The two best joints of beef for in the slow cooker are brisket and topside.

Brisket is great for that tasty, melt in the mouth, pulled meat texture. And if you use topside, you'll get a cooked joint that's deliciously moist, flavourful and is great for slicing rather than pulling.

So it's just up to you which you'd prefer to make. Brisket does tend to be the cheaper cut, and really is suited to slow cooker cooking.

Slow Cooker Beef Joint Ingredients

Okay, so I'm going to give you the basic, no-frills, amazing slow cooker beef recipe, and then I'm going to give you some ideas on how you can amp up the flavour even more if you want to.

Really easy recipe for slow cooker beef joint

  • 2 onions – sliced into wedges
  • 4 carrots – sliced into chunks
  • 1.5kg beef joint – I tend to use brisket
  • 400ml hot beef stock
  • Salt and black pepper – to season

Really simple ways to be a bit extra with your beef joint

  • Swap some of the stock for either a full bodied red wine like Merlot or Cabernet Sauvignon. Or try a rich fruity real ale. Both give a flavoursome gravy.
  • Marinate the meat with a herby or spicy rub. For a quick and easy way to do this we often use the Schwartz seasoning mixes – the Italian and the Moroccan work really well with beef and create a super tasty gravy.
  • You could rub the outside of your meat with mixture of brown sugar and mustard or horseradish for a warming kick of heat.

How To Cook Beef Joint In The Slow Cooker

You're going to love how simple it is to prepare this slow cooker beef roasting joint – it takes very little effort for a heck of a lot of flavour.

Step One – Preheat the slow cooker

  • Preheat the slow cooker to low for a 7-8 hour cooking time and high for a 4 hour cooking time.

Step Two – Add the vegetables

  • Scatter the chopped onions and carrots into the bottom the slow cooker bowl.

Step Three – Put in the beef joint

  • Lay the beef joint on top of the vegetables – if you're adding extra flavour to the beef joint with herbs, spices or rubs – do so before you put it in the slow cooker.

Cooks Note! You can seal the meat if you prefer, just browning all sides in a frying pan – I don't tend to do this, because I like to keep this recipe, lazy, faff free and use as little extra equipment as possible. And to be honest… once my meat and dinner are swamped in gravy, I don't think you can tell if it's been browned or not.

  • Pour over the beef stock – don't forget if you're flavouring up the gravy with red wine or beer just reduce the amount of stock and add in your chosen extra.
  • Season well with salt and black pepper.

Step Four – How to cook a joint of beef in the slow cooker

  • Just pop the lid on the slow cooker and cook on low for around 8 hours or high for around 4 hours or until your beef is cooked through to your liking.

Step Five – Thicken the gravy

  • If the gravy needs thickening – just add 2 tsp of cornflour to a mug and mix into a paste with some cold water. Stir this through the gravy and bring to the boil, simmer whilst stirring until the gravy thickens.

Disclaimer – in a lot of our slow cooker recipes we use a crockpot where the inner pan in safe to use on the hob as well as in the crockpot. If you don't have a hob safe slow cooker – then use a pan for any hob cooking then transfer to the slow cooker pan for slow cooking.
